Serves 10 guests
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Put all the components inside a pot, bring to a simmer, agitating until the sugar dissolves. After that, remove from the stove allowing it to cool down entirely. Decant into a sterilised bottle, cap it and refrigerate it chilled, where it will keep for around four weeks.
To make Cocktail Base: Combine all the liquid ingredients into a big jug, allow it to infuse for one hour, then pass it through preferably using cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of your cocktail base to a stirring glass containing ice, and agitate lightly for a minute until cold. Strain into a cold coupe glass or similar, decorate with the cranberries adding the final touch using a light spray of mandarin oil over the drink.
